Red bean pancakes, known in Japan as "dora-yaki" and "Hon Do Po Bin" in China, are crepe-like sweet pancakes that are popular all over Asia. The pancakes are made of common ingredients: light wheat flour, sugar, oil, and eggs. The filling is made with red bean paste, made from Azuki beans. A typical preparation involves placing some red bean paste on each cooked pancake and then rolling it up into a cylinder shape before serving. (Photo credit: Wikipedia)

Dorayaki is a type of Japanese confection which consists of two small pancake-like patties made from castella wrapped around a filling of sweet red bean paste.Legend has it that the first Dorayaki were made when a samurai named Benkei forgot his gong (dora) upon leaving a farmer’s home where he was hiding and the farmer subsequently used the gong to fry the pancakes, thus the name Dorayaki.
The Japanese cartoon  and anime character Doraemon loves dorayaki, and it has been a plot device several times throughout the series. This is a kind of pun, though his name comes not from "dorayaki" but from the word "doraneko" (stray cat). Since 2000, the company Bunmeido has been selling a limited version of dorayaki called Doraemon Dorayaki every year around March and September.

Ingredients:


    * 3 eggs
    * 2/3 cup sugar
    * 1/2 tsp baking soda
    * 3 Tbsp water
    * 1 cup flour, sifted
    * 3/4 lb anko (sweet azuki beans)
    *  oil for frying


Preparation:
Put eggs and sugar in a bowl and whisk vigorously.. Dissolve baking soda in water. Add the water in the egg mixture. Add sifted flour in the egg mixture slowly. Heat a skillet or hot plate and lightly oil it. Pour a scoop of the batter into the frying pan and make a small pancake. (about 4 inches in diameter.) Turn over when bubbles appear on the surface. Repeat this process to make 8-10 pancakes. Let them cool. Make pairs of pancakes and put a scoop of anko sweet beans between them.
Your dorayaki is ready to taste!!
